Oatmeal Cranberry Chocolate Chip Cookies

Sometimes you just need to roll up your sleeves and bake cookies! When you find yourself staring at the back of a bag of the Trader Joes bag of chocolate chips wondering if you have everything add some oatmeal and cranberries to the mix. Then you can easily try these Oatmeal Cranberry  Chocolate Chip Cookies and your friends will think you became some master baker overnight (its our secret)

These are made with unsweetened cranberries which give these cookies an amazing tart flavor to balance the sweet from the chocolate chips. Almost all cranberries on the market are sweetened so if you want to try the tart flavor order a bag from Honestly Cranberry.   They are grown by the Brown family in Wisconsin on their fourth generation farm that has been commercially producing cranberries since 1873. Once you taste a "real" cranberry it is hard to go back.

Cranberry Chocolate Chip Cookies

Tart cranberries and rich chocolate chips make for a great balance that will be a hit anytime you bake them for friends.

Ingredients

2 sticks of unsalted butter
3/4 cup brown sugar
1/2 cup sugar
2 eggs, room temperature
2 teaspoons vanilla bean paste (or vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
2 cups old fashioned oats (not quick cooking)
1 cup dried cranberries
1 cup chocolate chips

Instructions

Preheat oven to 375°

Add the butter and sugars to a stand mixer fitted with the paddle attachment and beat until fluffy. Next, add in the eggs one at a time followed by the vanilla bean paste. Whisk together the flour and baking soda and add to the wet ingredients (be careful not to over mix) Add in the oats, cranberries and chocolate chips and mix just until they are incorporated. Using a 1oz scoop portion out the dough onto baking sheets lined with parchment paper. Bake the cookies for 6 minutes then rotate the pans and bake for another 5 minutes or until they are golden brown.

 

Notes

You can do this with a hand mixer  (or by hand if you skipped a workout or two)
