If you dream of serving a beautiful honey baked ham for brunch but funds are low try this affordable tartine instead.
Forget ordering an expensive ($60+!) large ham and pick up some prosciutto. A tip is to go the nice grocery store in you area and head to the counter where they will cut prosciutto for you. Have them separate each slice with paper, this avoids destroying the pieces the you separate them (don’t you hate when that happens?)

What is a Tartine anyway?

A Tartine is essentially a sandwich without its top. The word Tartine is just so much more elegant than open faced sandwich so we are going with it.
The secret sauce that takes this simple combination over the top is BUTTER (mustard + butter+ honey = heaven) trust and believe once you taste this you will want to hide in a corner and eat the whole thing! Since the ingredients are so minimal get the best you can find European salted butter, real honey and proper dijon mustard.

Spread the honey mustard butter combination liberally on the sourdough, layer on a few pieces of prosciutto. Finish with some micro greens and freshly cracked black pepper. These tartines are easily made ahead and are can be served room temperature so they are a great choice for entertaining. If you are joining another party offer to make these and bring them along, they travel well and you will be sure to get invited back again!

Ingredients

1 stick of butter, room temperature
1/2 cup dijon mustard
1 tablespoon honey

Instructions

Whisk all ingredients in a small bowl until combined and smooth.

Notes

You can store this wrapped in the refrigerator up to one week.
